Two or three simultaneous streams, so the household is not fighting over one.
A programme guide that matches reality. Check it against three channels; if the guide is wrong, the provider does not control the feed it is selling you.

WHAT SEPARATES A STABLE IPTV service FROM A CHEAP ONE
One thing: how many servers they run, and whether you can switch between them yourself inside the app.
A provider with several will move you off a congested route at peak time. A provider with one will politely explain that the problem is at your end. Ask before paying: how many servers, where are they, and can I change mine. Hesitation on any of the three is your answer.
