Fintech: The usual ones that come to mind are neo-banks (a big % does not have a bank account) and anything related to financial access/knowledge or investing.
Education: models similar to lambda school, specially now that remote work allows you to have people living in lower-cost countries and earning in or selling to higher-paying countries

I think there could also be things like lambda school for content creators, helping people in latam become youtubers, podcasters, etc for the english speaking world that pays more (or not)
