I'm interested in sharing audio in a kinda casual way, similar to how Loom is kind of casual video.
Ideally I record something, from my laptop or phone, upload it somewhere and link to it.
Does anyone do this? What tools are out there?

Another good option is Yac ( https://www.yac.com/ ) makes a shareable link. They have audio plus screenshare similar to loom as well.

i know that some folks have done this with just quicktime via their mac or recorder via native iOS and then having those auto-upload to dropbox.

There are some alternatives to this, yet I cannot remember these atm.
For me it's handy service to upload and link to something
Be it audio, screencast or other file.
Their apps/ extensions do allow to make screencasts via this app
(Mac/Windows apps; Chrome/Edge extensions)
While I'm not aware of their phone app, you can upload via website there
Another (free) options are cloud storages where you can upload and share uploaded audio via link or to specific mail
Be it Dropbox, Google Drive, etc.
