I would love to hear more about Mastodon. Are you growing there ? Can you please tell me more about your experience there ?
Personally, I also much prefer Mastodon these days. The community there seems more “genuine and alive” if you know what I mean? (highly subjective and depending on the group of folks you’re interacting with, of course)
On Twitter posts may get more likes but on Mastodon engagement (comments and fruitful conversations) tends to be much higher.

Is it important which server I choose ?
The nice thing about Mastodon being federated is that, in theory, everyone can share, follow, like content from anyone else's server (similar to email where [email protected] can exchange information with [email protected]).
Now certain instances may explicitly de-federate from others, for example, if it is known that one instance hosts content that violates the policy of another instance but I think most "mainstream servers" are well connected.
There is a local timeline for each instance though which may be more or less useful to you depending on the community you choose. Being primarily an iOS developer, I joined iosdev.space, for example, where I find lots of interesting, like-minded folks in the local timeline but I still primarily follow and interact with people from all kinds of servers all across the "Fediverse" 🤓
I'd suggest just browsing https://joinmastodon.org/servers and looking for instances that sound inviting to you :)
It is also possible to migrate your account to another server later (I've never tried this though, so cannot comment on how well it works, haha) and even keep your followers etc. intact, so it's not completely set in stone should you change your mind later.

Quit Twitter in December when it started to limit my tweets to not mention my other social app accounts.

Ownership of Twitter changed, then rules started to change. It was no longer possible to post "This is my Mastadon account <account url>". I was not in agreement with this new rule, so I quit.
Technically I still have the accounts, so they can't be taken over by other people, and I guess perhaps in case ownership changes later and rules become more reasonable.
Is mastodon really worth ? can you please tell me more about your experience ?
what is your expectation?
Are there enough users ? Are you sharing content or building a brand on there ?
Mastadon is fragmented, and I don't know how much users you would call enough.
It's people on their computer or phone from all walks of life, so the people you care about as a person or company might be there.
I am sharing my progress on there, and have gotten my first app purchase via Mastadon.
I don't know the target audience you care about. Me, both as person and the target audiences of my projects try to see and support the universal needs and cares. Like 'everybody has great ideas they want to take to the next level'.
If you aim for very specific target audience, like AI researchers, there are specific Mastadon instances that would be super interesting to get involved in.
Twitter is way bigger, but it was a personal principled choice to quit there, not a commercial one.
