I've created an MVP for my platform which takes projects from growing companies and gives them to teams international students to complete remotely (For their professional development and international networking).

Good idea. I think establishing credibility is the key for this. Your clients (startup founders, etc) will have many questions and definitely less time in terms of decision making, especially about risk, commitments, timelines etc.
So if you have good/capable students, talk about them, their work, etc (even if it is anonymous) and try to establish credibility.
I agree with @aoveri. You need to have a very clear cut offering. Eg., your diagram had project management as of the type of work. I would be vary about giving PM work to students. Since you are starting out, think about offering work that people will believe that students can do - coding, data entry, basic market research, SM management under a senior SM manager, etc.
Thanks for the feedback. I think you and @aoveri are right, i'm going to narrow the projects down to basic market research and social media strategy to start.

Interesting idea - I would say the that broad range of possible things that these students can do is actually a bit of a detractor from me using the platform. It introduces a larger cognitive load of thinking through everything that I could package up as opposed to being told these are the 2-3 things you can use the platform for.

Has anyone given you any expressions of objections to your proposition? If so, were they addressed in this post? e.g. I'd be a tad reluctant to hand over my working commercial material and source code to a bunch of unknown unverified international students.

Understandably most companies would be reluctant to hand over source code and commercial material. As I'm at an early stage, I'm open to any kind of project being uploaded on to the platform, whether that be speculative strategy (E.g marketing strategy for this or that country/market, which market is better to enter etc) or technical. As a non-technical founder any advice you can give me on what type of technical projects a company may be comfortable with uploading or whether you think they would at all would be appreciated. (In the long term, the platform would be a recruitment vehicle, attempting to measure the soft skills the students have when completing the projects)
Sure. Probably similar to what's been mentioned with specific metrics...

Existing or closest competition
keyword data and CPC
Detailed analysis of pain points, garnered through eg forum posts, negative user reviews of competitors.
Outside of those things, perhaps might be possible to have students offer UX/UI testing and or improvements. But particularly any type of beta testing is in demand.
