Multiple SaaS Legal/Business Structure

For those that have created multiple SaaS products/companies at the same time what is the best way to setup the legal work for running a SaaS? I've been thinking about a generic name that owns multiple products in case I have multiple successful or unsuccessful ideas or maybe an LLC per project? How have you guys handled this in the past?
