Need help with AI Saas Product

I managed to build an AI-based OCR solution that can segment, regionalize and read very complex and noisy documents/images with advanced NLP entity recognition and part of speech tagging. Essentially it can train new and classify document types and extract/identify key elements in the document.

I want to add further workflow management on top of this in order to automate document management.

With that as context, I am uncertain about whether I should focus on a specific niche vertical and tailor the messaging if so which ones?

Or should I just make this a utility and see what markets would be interested?
