Need rec for Teachable-like platform which accepts free text responses to questions

As stated above! I'm setting up a course (estimated hundreds of participants in one cohort) with certification and the assessments consisting of open-ended answers to questions.

It would be great to have at-a-glance tracking of student progress and enforcement of things like lecture order, video watch time, can't progress without completing the assessment, min char count limits etc.

I just signed up for Teachable Pro and I love ALL of their features for the above but their quizzes are multiple choice only, which won't do for our purposes.

Teachable Support's suggestion is to embed a Google Form via an iframe but this doesn't collect any info re student identity - and if I'm going to ask students to manually enter an identifier and then manually manage the result sheets, it defeats the purpose of paying for Teachable!

Does anyone have a suggestion? Ideally something that I can pay for and spin up immediately? Looking to avoid demos, having to contact a salesperson, the typical long SaaS sales process etc etc...
