Payment service provider ... Stripe or Paddle

Hi guys, we are choosing our payment service provider for our product UpEmbed.

Changing the provider would be extremely difficult after launch, so we would like the community's opinion before we move ahead.

From my research on this, the founders are favoring Stripe, which has a lot of praise but then there is a group that found handling VAT or other taxes on transactions difficult to manage, which Paddle handles well.

Super confused at the moment, and I want to know your opinion.
