To explain further, the idea is to have a script that can modify different parts of the page depending on information it has. For example, if the user is on mobile, you could change the text to say something like "Hi mobile user". Or if they're based in san franciso, you could update a maps part of it to show SF rather than something else.

I’ve got something like this. Except I do all my page modifications server side because I find that to be smoother.
You could use tools such as Ahrefs or SEMrush to roughly estimate the traffic the competition is getting.
Another good way to see if / how much demand there is is to use Crunchbase and look how much VCs have invested in those startups.
There are plenty of services like this and the demand is definitely there (just see their SimilarWeb traffic and the fact they're spending $3k+/m on ads).
