I'm currently a mailchimp user, but would love to understand what this community thinks about awesome newsletter + drip campaign tools for a small business looking for a cheap solution.
I don't need too much bells and whistles, a plaintext email newsletter with the ability to automate some of the emails would be fantastic. Thanks!

Give MailerLite.com a try.
It has Plain Text Emails, Email Automation, even Landing Pages staring from their FREE Tier, which covers the first 1k subscribers.
MailerLite.com seems nice.
Currently been helping run a newsletter on Mailchimp for the past year and a half, and it has gone smoothly overall. Also, you can easily export contacts on a list if you find a better tool. I'm looking forward to other peoples answers as well.
If that’s all you want then Mailchimp should be a good choice.
If you want more then I’d suggest ActiveCampaign. This tool is epic and really changed the game for me.
So, a neat thing I found were conditional blocks. You can dynamically alter the messages in automations and newsletter blasts based on what you know about people - and split test email subject lines.
If you someone is just getting started with fitness and someone else is an old pro, you can use conditional blocks to slightly alter the message to appeal to both groups.
Our opens and CTR both went up after we started doing this.
I've been building tuemilio.com which can help you grow your subscription list and give you some metrics like conversion, where are they coming, etc. It can not send simple emails (now), but if you like I could implement that quite quick and beta test that together. It has also tools for importing and exporting your subscribers to other services.
