Remote EU co-founders, where to register business?

Hello everyone, would love to hear other remote cofounder's experiences on registering their business.

We are both based in the EU (Germany/Spain) and are deciding where to register our SaaS business. Right now we've narrowed it down to Stripe Atlas, Estonia and Ireland.

We didn't pick either of our resident countries because we wanted something english.
