It's too early to say yes or no, would be great if you can provide more context and what problem are you solving.
Obviously, you should do your market research and validation but common sense says both privacy and analytics are two things that are going to be more and more important in the upcoming years.
There's a big push even for the smallest of companies to collect and analyze data just like the big players have been doing for years. The barrier to creating and using data pipelines is lowering by the day, so there's a lot of good offerings.
On the other side of the coin, public awareness of privacy and legislation is catching up at a speedy rate as well.
If you combine these facts, I personally think that there are a lot of unanswered questions regarding "tomorrow" in this domain, and on the surface it looks like it's a worthwhile effort to try and answer some of these questions.
There's a bunch of very good ones: GoatCounter, SimpleAnalytics and Matomo come to mind.
Looks like a well served niche, I'd stay away (unless of course you can bring something very new to the table).
I'm not exactly sure, but I feel like analytics SaaS products have become more popular recently. That means it's a proven market, but you should find a way to diversify your product from the existing products around if you want to break in.
