Simpler headless CMS for page copy?

At my last two developer jobs we've left writing certain bits of copy to the writing team. We would just call the content API endpoint which would retrieve a content object like this:

   heroImage: "http://www.awesomeimage.com/image.jpg"
   ...
}

Then we could just drop those object properties in the code and wouldn't have to write the text ourselves. The content object was created on a dashboard that was easy to use for writers to collaborate and update frequently, had versioning, etc.

I've been wanting something like this to use myself, but it seems like every headless CMS I come across is too heavy handed. It tries to force articles, and collections, and pages, and schemas. They seem built for full blogs not just page copy.

I'm wondering if this is something other people are wanting too? Or if there is a product out there that handles it well that I'm missing?
