I think GitHub open source already works in a somewhat similar way, where people can discover projects and contribute voluntarily when they find something interesting.
That said, I really like the idea. One thing I feel would be very important is authenticity and trust. Since founders are giving contributors access to real startup work, there should probably be some strict verification or screening process for who can contribute.
Overall, the concept sounds useful, especially for solo founders who need support but are not ready to hire yet.
