I love the frontend/ui of Nextless.js, React SaaS Boilerplate using React and Tailwind CSS.
I'm totally biased because I built myself from scratch as a solo founder/solo developer without any design background.
I learnt so much about UI but also UX. Hope this can help you

I'm using chakra for my SaaS currently, is it hard to migrate to SaaS UI?
Not particularly hard, I integrated it into my existing Chakra app without issues. The pro version comes with a starterkit, but I'm only using it as a component library.
Flezr.com by @upenv has a brilliant UI as a no-code tool.

I use Quasar ( Vue JS) for frontend and Symfony ( PHP ) for back-end. I use GraphQL API to glue backend and frontend.

Stick with a common design pattern. Material design is well thought out. You can also use Apple's design guidelines or Microsoft's.
