It's too visible that it was put together quickly. It doesn't look very polished and doesn't innovate much on the UI.
I think you're trying to be as good as the other products in the area, so you're trying to get a respectable looking sign up form and all that. Why not instead try to innovate and minimize the bureaucracy as much as possible?
There's no need for things like a screen to congratulate the user for registering and telling them what app they just registered for. They already know that! :)

I disagree, I think the confirmation is nice.

Indeed, you need add CTA message. Plus button is not good enough.
I would sugest also not use 2 inputs for passwords during SignUp. You can import captcha and user can click on images or you can Send SMS digit code.

We want to target people who are less tech-savvy, whether it's a parent, or a young person
I think the original is pretty on point, I can relate to the less tech-savvy part and personally think it will do very good!
Otherwise, you can run A/B test on those two variation and see which one performs better. If that's the case you should check out https://howuku.com for our free A/B test tool. :)

Generally, the industry is moving away from those + buttons as they are ambiguous at best. Prob better to replace with a CTA like "Add a password".
Also, you should probably add a view password option when inputting
