I am trying to figure out what are the latest market trends with everything to do video - are there any good reading resources you would recommend? Do you have an insider's opinion to share?

The could be: new platforms being developed and used (TikTok is an example), live streaming\VOD platforms, high grade video production companies and technologies on the rise, types of video content that is becoming trending (and is here to stay), video generation, content creation, video editing trends, video trends in marketing. There are many other topics in the space of video content, I just listed a few :)
