I have been thinking of making a website where I would host monthly hackathons in a similar fashion to Ludum Dare.
If the idea went ahead I would slowly introduce weekly mini hackathons.

Hackathons for what? You would need to niche down and focus on something.
It would be a random theme every month. So one month it could be Life, and the task is to build anything based on that theme fro example a life tracker or a website stating how many weeks of you life have passed.
I want it to work in a similar fashion to Ludum Dare
I think the best way for you to validate this is to try to organize a couple of hackathons in a row. If you can get enough people attending multiple times then think about how to make a product out of it.
