What do you track cold emails?

I'm starting to write cold (but personalized) emails to companies within my niche.

I want to track how these cold emails perform (especially open and click rates). However I'm not sure what tool I should use for that.

Sending them as newsletter campaigns might be one solution, but that seems pretty "hacky".
