I am in the middle of building another app idea and need a landing page to help kick off pre-orders and more validation. Wondered if you have any suggestion? I found a great one and have completely forgotten the name of it!

I found https://versoly.com/ from hanging out here. I will say I'm very impressed so far. I got a basic landing page setup in 30 minutes.
You must use Elementor! 🦸🏻♀️ I've used it without having any idea about anything of how to create a website in wordpress and trust me, it's very easy to use and find any information about it just "googleing" it (forgot to say it, it's a wordpress plugin). If you need help with it let me know.

In terms of simplicity Carrd is my favourite
We use Leadpages for https://toasty.ai/, I like how it is so easy to use and don't try to do too much!
If you are comfortable working with WordPress, Elementor.com builder is easy to use and create landing pages for your MVP. There is a large community that will help you out if you get stuck or just looking for inspiration as well. I am using it for my own and client projects.
