I always worry that the signature is not too big and does not attract a lot of attention, but is anyway noticeable. I learned a lot about email signature size when was creating one for corporate emails. To summarize briefly, a well-designed email signature should be compact enough to not overwhelm the email but large enough to be easily readable and convey necessary information. In terms of physical dimensions, a typical email signature might range from around 3 to 7 lines of text, depending on the amount of information you want to include. This usually translates to a height of around 80 to 150 pixels.
