I’m working on a new idea and I have a single Google Doc which I use to write down the main business proposition, all attributes the website would need to have, different data points I may need to gather, and all other brainstorming things that come to mind. What do you use? Is there something better than my google docs solution?
Trello for task/to-do tracking.
Workflowy for notetaking and brainstorming.
Evernote (long-term) and Pocket (short-term) for saving links to articles and resources.
I use Evernote, but I'm thinking of switching back to Workflowy. It's simply outstanding for jotting down lists of things.

Total plug here but i used heavily https://www.shareist.com which i co-founded to research and launch my new side project. It captures notes, links, images, videos, etc. and also helps you distill things you find to your social networks to see if your audience engages with it. Try it out, it's free.
Dynalist for quick notes and collecting ideas. Also it's good for simple planning.
Airtable works for me better than Google Spreadsheets.
My flow consists of using Trello for notes & ideas, quick bookmarks of articles & various links and Pinterest for design or simple images that would help with prototyping or planning that 'idea'. Google Docs comes in handy when gathering big chunks of data that needs to be organized and can be used for further research.
Usually it's enough to have several Google Docs. By putting each major item in a separate Doc, I can develop that idea without needing to worry about the main Document becoming too bloated. There's an effective limit of around 50-80pp depending on graphics, where edits within a Doc become sluggish.
For initial ideas that require more research I use Google Tasks as a research planner and Keep to "pin" links about a research topic. The notes within Keep evolve into footnotes.
I use Bear Notes. My idea list is divided into sections(productivity, bots, visualizations etc.). At the top I have a section called "inbox*" so I can quickly jot something down and categorize it later. Or just keep things there and see if a good category emerges. Which, by the way I should get around to soon since it's filled up a lot!
In the past, I have used combinations of OneNote, Trello and Evernote. In the end I think it comes down to whatever works for you ;)
I usually have note app (Google Keep) so I can have a checklist of things related to the idea, sometimes I also keep these notes in my task management app (something like Trello) so that it is more visible.
I never quite go into so much detail until I have to use Google Docs, but sometimes I use Google Spreadsheet when doing some data collection or analysis.
I scribble on paper as well, especially on design matter.
