What tools should I use to get the best analytics for my project?

I've launched a couple of very small products, and have always been kind of blind because all I use is Cloudflare's free plan integrated analytics (I couldn't afford a paid plan).

Now I'm preparing to build something that I hope will be bigger, I can afford to pay some services, and I know how important the numbers are, so I want to get them in the best way possible.

But I'm a total noob on the topic so I need guide.
