I don't really care that much about the SEO inside my app, that is if it's gated for registered members anyway, I would not want bots to crawl that content for obvious reasons. Of course I have all the basic stuff, that is the correct markup semanticly, so title tags, correct use of headings etc, but I mostly care about SEO when it comes to my landing pages and my front facing content pages, like blog posts, landing pages or other articles. There, the on-site SEO becomes quite a bit more complicated. I make sure to analyze my competitors, to see what keywords and topics they are an authority in, and analyze their on page. What sort of words do they use, and at what frequency (TF*IDF), and see what value I can add. I make sure to have the internal linking flowing well on my site, so that the "link juice". can flow to the pages I want it to.
The off-page is probably the most important, however, with analyzing back link profiles of my competitors, compared to my own, thinking of ideas of how I could gain natural high-quality links to beat their profile, and if needed disavow any really spammy or harmful backlinks.
But yeah, I only care about on page for my public-facing pages, and I care even more about keyword/content research and off-page.

Well, i'm a freelance SEO specialist on Perfectlancer and when I'm researching SEO for my own website, I look for two things: how the site is structured and what its link profile looks like.
Structurally, I want to see a clear hierarchy on the page, with H1 tags used to identify the main title, concise and keyword-rich page titles, and good use of anchor text within the content. It's also helpful if the site uses breadcrumbs to help navigate users through the hierarchy.
From a link perspective, I'm looking for a healthy mix of dofollow and nofollow links, as well as a good variety of domains linking to the site. The site's backlink profile should also be relatively clean; no spammy links!
What do you mean by link profile?
By good use of anchor text do you mean to say that the name of the links should be readable instead of placeholder names like "click here", "here" etc?
The strong tags in the H1, H2 and H3.
The alt tag of images, the name of the image file.
Do you look at the text of the header elements or just the hierarchy?
Name of the image files matter for SEO?
The header elements should be a summary of the following paragraph. And ideally it should contain your long tail keywords, these put in strong.
Images can make you appear in Google Images results, it's useful if you are doing ecommerce for example because in this case the first line of results comes from google image.
And generally speaking the more you help Google to understand the content of your page the better. If in each possible tag there are your keywords Google will necessarily understand

have images into webp. Gif and other with webm for media. Add alternative (alt="") in your <img> in HTML same for title="". Fast website less than 1s see GTmetrix. Site that is compatible with phone and tablets. HTTP --> HTTPS redirect with HSTS Header. 1000 Words or more per pages. Cookies consent with privacy policy and turm and conditions page (google like when you respect the law). if you have a lot if images compress them resize the resolution and add a lazy loader in JS to speedup your site. All of that can be done for free and it can help your site rank #1 on Google.

1st step to start with what you want with SEO? Convert via Ads, Affiliate Link, signup or Something Else?
Who is your competitors what is their strategy? which keywords driving? List down all those keyword with estimated traffic & competition.
Then plan your content.
