I have European citizenship and may go back to Europe to stay long-term but for now, currently travelling around. I'm planning to launch a few SaaS applications soon and I am not sure where to incorporate them? Any suggestions?

I think it depends on your long term goals. If you're looking at getting funding or selling, incorporating in the US (via Stripe Atlas) may be a better solution.
Otherwise, you may look at Portugal who seems to currently provide a lot of tax advantages for people relocating there. Not sure about other countries but I heard bad things about France and Belgium (mostly initial cost and overhead).

It really depends on your goals. I would second the thoughts of @snyff and would add this: By setting up a US company you get alot of access to payment systems, specifically Stripe and excellent banking with companies like Mercury bank. Usually when setting these up for a company you have to physically go to the branch to do your KYC, but with Stripe Atlas or Doola you can do all your documents online, and KYC online and get a bank account that allows you to sign up for alot of tools that help you accept money internationally.
