I know several indiehackers that sell data-products on airtable and use Gumroad to sell it.

I'm building a data platform but am not exactly sure what you're after.
Mainly a spreadsheet. I'd like to rotect it from being sent as a link and have users get notifications when data is updated in it (when I decide).

Thanks, one day, when I launch Trilli, that's one of the features I have on the roadmap, I guess I should prioritise it highly.
Effectively, users will be able to curate their own private datasets ave sell access to them with Trilli handling all the payment and access control.
If you'd be willing to be a beta tester then I'll let you know when I'm close to launch.
PayPal is not supported here so I used ko-fi and buymeacoffee. Linked my Stripe account. Both are different from Gumroad but I managed to land a few sales over there.
There is also Flurly, closest solution to Gumroad with way lesser fees. Listed a product there but haven't made a sale yet.
Cons are;
You need to play by their terms. Some of them keep the money for a while, if you are willing to spent it on marketing you gotta wait until they are pleased. Then stripe holds it for another week (probably for new merchants), so it become harder to manage money flow.
You are introducing another step for your customers, they may be okay to pay you in site but forwarding them to another platform forcing them to create an account etc may put them off.
If they are not familiar with the platform, same thing may occur.
Pros are;
It's easy. They all provide the same experience, you upload your stuff or give it a link, put your price, add discounts, all the functionality is there.

Maybe it'd be ok to pay one time fee of $29 for a white label solution. But since kofi and buymeacoffee offers similar solutions for less while providing many upsell opportunities. I don't think their greed will pay off.
Do they also guard the content?
I'm not sure what do you mean by that. But in any case if I get access to content I'm pretty sure I can scrape it. Anyways I'm not saying no one should use it, apparently some people do. It doesn't fit me.
The paytable guys probably add a reverse proxy so at least you can't easily send the link to someone that didn't pay. Probably they can remove the option to easily export the data.
