Oh this looks so good!
I would suggest creating a chat community ( like spectrum) behind this at some point to answer questions.
Questions.
Does the demo contains all the features?
How can I know the code quality of the boiler plate?
What do I get? A zip file with the boiler plate code? Libraries?
What happens when a bug is I found in the boiler plate?
How is the 1 project restriction enforced?-

I've been procrastinating myself because of thinking of all these little things here and there I have to set up. I still not sure if this fits my needs as I need an PWA, and yet I spend days reading and doing small test with all the new information I get (pwa, amp, service workers, best practices etc) and I definitely need something like this to ramp up. Maybe I'll give it a try to stop planning and start executing.
Btw another tiny thing, when the page loads the CSS delay a tiny bit to load causing the page to blink for a bit. It's not too big of a problem, it's just consistent.

This is much needed! Any chance to have abstraction of db and payment processors? Aka support stripe and Mongo?

I'll work on adding Stripe support when requested by a paying customer. Delivery: 10 days after purchase or full refund.
On Mongo: would you please detail your use case? I've worked on 2 projects with Mongo and both times we concluded at the end that PostgreSQL with JSON/JSONB support (including indexing, queries, views, full text search on these) would have been a better fit. One can use relational tables for some features and JSON for some others.

Honestly its been a while since I have take a look at the Postgres support for JSON. Several years ago (about 3), the syntax notation was just horrific. I also find the time to market for Mongo is a lot faster since its so flexible.
So unless things have changed a lot with the Postgres implementation and your tool is to support quick prototypes, there might be many users that like the speed and flexibility Mongo offers.
