I'm happy to announce that Toasted Analytics has finally launched after 6 months of development, tweaking, fixing & rewriting. Over 100 people subscribed to Toasted's launch in December and January.
I don't want to make this a purely promotional post, what I'd like to do is just share some of my thoughts. I'll keep this short and maybe will follow it up with a longer blog post in a few months.

There's no perfect tech stack. Ask yourself what requirements do you have regarding your own product? For example: I wanted Toasted to have an API that performs really well while using little memory, so I picked a tech stack that allowed me to achieve this.

Unless you have millions in funding then expenses low. Realize where you need to compromise and instead of using an amazing (and expensive) paid tool. Pick a free or open source alternative, maybe even build your own. It's much easier to play the long game when you're not loosing thousands every month

Look at the competition. Looking at what the competition is offering is a great way of learning what their customers want (and what yours will too!).

Make sure your product is ready for prime-time. Ask yourself, would you go back and try a tool for the second time if the first time your experience was terribly buggy and unstable?
And finally... Don't give up. It's easy to fall into the mindset of "there's no way this will work" during the development phase. Not to sound too cheesy but "you miss 100% of the shots you don't take". So, keep pushing, you never know what the future holds.

I've just launched a landing page on which people can subscribe to the launch of Toasted Analytics in January!
Soon it will be shared on Product Hunt, BetaList, Reddit and other places so Toasted gets some early users which will allow us to test the platform before the launch.

Couldn't find a single analytics tool that was simple, provided enough data without violating user's privacy. Most of the tools out there also require getting consent from visitors since personal data is being collected.

What do you think about Matomo for example https://matomo.org/? It's open source and 100% free if you'll use self hosted version
I like Matomo, used it in the past when it was called Piwik. I like it and personally if I wanted something more similar to Google Analytics I could use Matomo.
Toasted is much, much simpler by design. Simple metrics that everyone can understand, all on one page. No personal data is collected, cookies aren't used which is great for websites/companies that don't want to deal with GDPR and ask users for consent.
P.S. I needed analytics for a simple website about year ago and couldn't find anything that worked for me (different reasons: pricing, dashboard, amount of useful data, cookie notices, etc). That's why I decided to work on this
Cool! I've noticed that there are more products which are focused on simplicity and I like that. I think that could work, so good luck!
