3 goals in mind:
What convinces you to subscribe to a newsletter? Testimonials, seeing a previous edition, etc.? How should I improve copy/design from here? Any tips welcome!
Just a few notes:
-You've approached each of your three goals before getting to the final "Contact" section, which makes it very unclear what this section is intended to attract. You've also given the viewer two options to contact you, which is splitting the CTA and adding confusion. Pick email or form and eliminate the other.

TLDR: Concentrate on a single CTA, and make sure you nail it. Move to the two others from that point.

Yes you should add testimonials
Yes you should add links to previous editions (and state what was so great about them) A few samples does great. Not just a link to "archives"
Just say what's in the newsletter. The word "content" is useless here.
